Zucchini Blondies

Zucchini is kind of like the veggie version of coconut. It is so versatile and can do some many things with foods, plus it is so nutritious. It adds wonderful moisture to this traditional brownie type recipe. Don’t worry, I snuck in some delicious chocolate chips to create more of a “halfway” between the blondie and brownie. It is gooey, moist, packed with nutrients and loaded with flavor. Makes 12 servings

1 cup almond flour

1/4 cup arrowroot starch

1 tsp xanthan gum

1 tsp baking soda

1/4 tsp sea salt

1 flax egg (1 Tbsp flax, 3 Tbsp warm water)

1 tsp almond extract

2 cups fresh, shredded zucchini

1 Tbsp coconut oil

1 cup chocolate chips (Enjoy Life is a great brand)

 

  • In a large blender, combine dry ingredients. Slowly add in flax, almond extract, oil and zucchini.
  • Blend slowly until well combined. Fold in chocolate chips. Pour batter into a greased 9×9 baking dish.
  • Bake at 350F for about 25 minutes or until blondies start to brown. Let cool about 10 minutes.
