Watermelon Salad with Coconut Yogurt


My two kids can eat an entire little watermelon by themselves – not kidding, within seconds that sucker is gone. Anyway – since we are moving soon and I have packed up a lot of things, we are on a super simple meal plan. Just because you want something simple doesn’t mean you have to sacrifice taste or presentation. Throw this simple salad together to serve your guests or satisfy your fruit loving kids. Either way, it’s cheap and easy!

1 small watermelon, cut into chunks or balled

2 cups grapes, quartered

1 cup blueberries, halved

5 mandarin oranges, peeled and cut into pieces

1 carton plain coconut yogurt (or dairy yogurt)

1 Tbsp honey

1/2 tsp vanilla


In a small bowl, combine yogurt, honey and vanilla until well blended. In a large serving bowl, add in fruit and pour over yogurt mixture. Carefully fold together until fruit is covered with yogurt. Watch for tiny hands stealing bites
