Happy Birthday to me! Actually, it was the 27th. I spent a lot of time reflecting on my birthday. This time last year I was going through a really rough time in my life – the worst I’ve had. I was really struggling with my health and how I needed to handle it. Believe it or not, I was always a really private person. However, I have found that this blog is my outlet and I’m so happy for it. I don’t care if I ever make a single penny off of it, as long as I can help others and myself! Anyway, I got a little sentimental as I remembered how terrible I felt on my birthday last year. Plus the fact I was waiting on colonoscopy results, preparing for my second upper endoscopy, pumping myself full of useless meds. The worst part of it all was how down I was about everything. My world was very dark and gloomy. Fast forward to this year and I’ve realized how far I have come. I have a wonderful support system that has helped me past all those “rainy” days. My husband and I are closer and our faith is stronger. So all-in-all, I’d say my struggles were worth it as they made me realize how fortunate I am and also how quickly life can change for better or worse. Okay that’s all for the sentimental reflections – I guess I just want to say that if you are struggling with something – especially relating to your health/or diet – just be patient. Healing takes time and guess what? You won’t die if you don’t eat bread or cake (I guess I shouldn’t say that for a fact but I’m pretty sure of it). And guess what else? Your birthday can be special without cake. So if you are on a gluten free, grain free, soy free, dairy free, egg free, etc diet – you can enjoy this “cake”. Plus, this is kind of the perfect cake to make during the summer as it features fresh fruit and requires no oven! Enjoy!
1 watermelon, rind removed and cut into a cake shape (I cut mine into a square)
Cream cheese frosting (see recipe below)
Chocolate chips or chocolate shavings
Place watermelon “cake” onto a serving dish. Spread frosting over watermelon and sprinkle with almonds and chocolate. Obviously I failed on the birthday candle but add one if you like!
Cream Cheese Frosting
1 can full fat coconut milk
1Tbsp guar gum, cornstarch, or other thickening agent
1/4 cup dairy free cream cheese (I used Daiya brand – but you can omit this if you’d like)
1 tsp vanilla
1/4 cup honey or maple syrup (or other sweetener)
In a small blender (I used a Magic Bullet), combine ingredients and blend for about 2 minutes or until smooth. The frosting should be very thick, similar to regular frosting. This also makes a great fruit dip!
