Veggie Burgers

For Christmas, my husband and I got each other the same gifts – meat grinders. We had talked about it but I never thought we’d get each other the same thing. Either way, it worked out! We ground up some chicken, deer, beef, etc just to try it out! I got a little crazy and decided to make some veggie burger patties too. A couple of hiccups but we figured it out! They turned out great, freeze well and are perfect for a light healthy meal. I served ours on lettuce leaves for less carbs – but they’d work on a bun! Makes about 6 burgers

1 can black beans, rinsed
2 small sweet potatoes, cooked, peeled
1 cup kale
1 cup carrots, cooked
1 tsp sea salt
1 tsp garlic, minced
1 tsp black pepper
½ tsp dried sage
½ tsp dried thyme

  • In a meat grinder (or food processor), combine all ingredients. If using a food processor, puree until smooth. If using a grinder, you may need to run the ingredients through a couple times to get it smooth.
  • Form into 6 patties and place on a baking sheet lined with parchment paper. Freeze for about an hour.
  • Cut parchment paper around patties. Place patties on parchment paper into a freezer safe bag or container.
  • To cook: remove from freezer and place directly on grill or skillet (no need to thaw).
