Now that summer is here, don’t feel like you have to blow your diet on unhealthy foods or sacrifice your favorites. There are so many ways to fit in some tasty, summertime treats – the healthy way. This recipe for Banana Splits is very simple, low calorie, dairy free, vegan, Paleo, low fat BUT still tastes AWESOME! Plus if you serve this to guests they are sure to be impressed by your awesome ice cream making skills. This makes about 6 servings
1 can coconut milk – I use full fat, but light is usable
2 cups unsweetened vanilla almond milk
1 Tbsp vanilla
1/4 cup honey or maple syrup
Other items (if desired)
fresh pineapple chunks
fresh diced strawberries
chocolate chips (or chocolate sauce)
bananas, cut and split in half
coconut whipped cream
- In a blender, combine ice cream ingredients and blend until very smooth. If you have an ice cream maker, you can follow the instructions on how to churn and make the ice cream. If you don’t, pour the liquid ice cream mixture into a 3 qt baking dish. Cover and freeze until solid (at least 4 hours).
- Once the ice cream is frozen, assemble banana splits. We took a banana, cut it in half, split each half down the middle and placed into a bowl. We topped each bowl with a couple scoops of ice cream. We then added our favorite toppings. I used pineapple, strawberries, chocolate chips and almonds. It was delish!
