Ice Cream
1 can coconut milk – I use full fat, but light is usable
2 cups unsweetened vanilla almond milk
1 Tbsp vanilla
1/4 cup honey or maple syrup
Other items (if desired)
fresh pineapple chunks
fresh diced strawberries
chocolate chips (or chocolate sauce)
sliced almonds
bananas, cut and split in half
coconut whipped cream
sprinkles, etc.

  •   In a blender, combine ice cream ingredients and blend until very smooth. If you have an ice cream maker, you can follow the instructions on how to churn and make the ice cream. If you don’t, pour the liquid ice cream mixture into a 3 qt baking dish. Cover and freeze until solid (at least 4 hours).
  • Once the ice cream is frozen, assemble banana splits. We took a banana, cut it in half, split each half down the middle and placed into a bowl. We topped each bowl with a couple scoops of ice cream. We then added our favorite toppings. I used pineapple, strawberries, chocolate chips and almonds. It was delish!
