I love turnips but they are kind of a pain to grow with their huge leafy greens. I had never considered cooking up the greens though but they are pretty delicious. We decided to keep it simple and saute them up with some onions and bacon similar to spinach. The results were amazing! Now we don’t have t waste all those tops to our turnips! Makes 4 servings
6 cups turnip greens
3 slices bacon 1/2 cup onion, sliced
2 Tbsp coconut oil
1 tsp sea salt
1/2 tsp black pepper
1 tsp garlic, minced
In a large skillet, cook bacon. Remove from skillet and drain over paper towels. In skillet, add coconut oil to bacon drippings. Add in turnip greens, onion, salt, pepper and garlic. Cook, stirring frequently, until greens are cooked and soft. Add bacon back to skillet. Stir to combine and serve.
