Turkey Ratatouille Chili

Ratatouille is kind of confusing. There are so many different ways to make it that I kind of think it’s just a catch all term for vegetable something-or-other. Regardless, we love the movie and decided we needed to try it, but our own version! My son calls this Turkey Ratatouille Chili. It works I guess! This dish is really hearty and filling. Feel free to switch up the vegetables if you’d like or also substitute beef for the turkey. This makes about 4 large servings.

½ lb ground turkey, lean
1 cup zucchini, diced
1 cup eggplant, diced
½ cup mushrooms, diced
¼ cup onion, diced
1 Tbsp olive oil
2 cups diced tomatoes
1 cup tomato sauce or pasta sauce
½ cup water or vegetable broth
1 tsp basil
½ tsp oregano
½ tsp sea salt
½ tsp black pepper

  • In a large skillet, brown turkey.
  • In the same skillet, add in zucchini, eggplant, mushrooms and onions. Saute the mixture in olive oil for about 15 minutes or until vegetables are soft.
  • Sprinkle basil, oregano, sea salt and black pepper over vegetable and turkey mixture.
  • In a large stockpot, combine tomatoes, pasta sauce and water. Add in vegetable mixture and stir until well combined.
  • Bring to boiling and serve.
