During my time at the Gluten & Allergen Free Expo, I met a lot of great people. One person was Tiffany Hinton, operator of GF Mom Certified. She really has a great story and I encourage you to check out her site. While at the expo, I purchased her book, Mom Certified Celebrates Heritage. I really love it! The idea behind the book is to recreate recipes that mimic family recipes, yet still being gluten free. The book features recipes ranging from southern soul food (such as Fried Chicken, Collard Greens and a delicious Bourbon BBQ Sauce) to small town USA recipes (such as Apple Pie, Goulash, Ham and Bean Soup) and everything in between. My favorite recipes are the Orange Chicken and the Toffee Coconut Macaroons (I mean really, can you go wrong with toffee and coconut?). What is great about the recipes, besides the tradition and the stories, is the simplicity. A lot of people are scared of gluten free cooking. Trust me, you don’t have to be! It can be easy and Tiffany has done a great job of illustrating that in delicious fashion. I’m excited to try even more of the recipes in her book!
Tiffany is also releasing a new ebook today! It is called Three Days to Perfection. This is a great name for this book as it shows a perfect creation of gluten free treats. Since going gluten free, I truly miss baked goods of any type. We were the typical American family making biscuits and croissants out of a can. Sure they were easy, but full of junk and gluten. I have tried numerous times to recreate some of my favorite baked goods – some with little success, some with complete failure. As you can see, it is not only a book that has the perfect dough blends, but also how you can use those to create family favorite dishes. A few of the other recipes included in the ebook are Beef Wellington, Ham and Cheddar croissants, Pumpkin Butter Éclairs, Blackberry Éclairs, etc. In addition to great recipes, Tiffany has also included some handy tips and tricks for your gluten free baking.
