Sweet & Tangy Pork Chops

Today is my wonderful husband’s birthday. He sacrifices so much and works so hard for our family. He keeps me going, especially when I need it most. So today, he gets whatever he wants for birthday dinner! I made his favorite dish below, along with some green beans and his favorite dip (recipe coming soon!).

This is my husband’s favorite dish. Since today was his birthday, this is what I decided to make for our main dish. It’s very easy and so full of flavor – a perfect blend of sweet and tangy. You could serve this over rice, with a baked potato, with salad, etc. It goes great with just about anything. Don’t forget the diced green onions – not only are they pretty but add a little extra bite to the chops! Makes 4 servings

4 pork chops (bone-in or boneless work the same!)

1/4 cup finely chopped onions

1 tsp minced garlic

1 tsp olive oil

1 tsp sea salt

1/2 tsp black pepper

1/2 cup apricot jam – all natural is best (peach also works great)

1 Tbsp GF soy sauce or coconut aminos

3 green onions, diced

 

Sprinkle pork chops with just a little salt and pepper on each side. Cook pork chops on grill over medium heat for about 5-8 minutes on each side until cooked through (longer if your chops are thicker). You can also cook the chops in a skillet over medium heat until cooked through. Place chops are a serving dish and keep warm. In a sauce pan or skillet, saute onions and garlic in olive oil. Sprinkle with salt and pepper. Cook for about 10 minutes or until onions are soft. Add in jam and soy sauce. Cook for another 5 minutes. Pour sauce over chops and top with green onions.
