Mornings are busy… crazy busy. There are many times I just want to pour a bowl of cereal. However, I’ve learned that scrambles are so easy to make and are so customizable. I’ve featured several scrambles on this blog so far and they are all different and great in their own way. Lately, my goal is to eat greens at every meal – yes every meal. For breakfast, that is the hardest. However, throwing them in a scramble makes them less noticeable. This scramble literally takes just a few minutes to throw together. Makes 2 servings
1 large sweet potato, baked * see note below*
4 oz sausage, crumbled
2 cups spinach
1 tsp sea salt
1 Tbsp coconut oil
1/2 tsp cumin
1/2 tsp paprika
In a large skillet, brown sausage in coconut oil. Meanwhile, peel and dice sweet potato. Add it to skillet. Add in spinach, salt, cumin and paprika. Saute over medium heat for about 10 minutes or until sausage is cooked and sweet potatoes are starting to brown.
*I like to keep some pre-baked potatoes on hand for quick meals like this. Simply bake the potatoes in the microwave or oven. Also, I like to just slightly bake them not completely through. This way you can still use them in your recipes without them being mushy.
