Stuffed Bell Peppers

Work as been crazy busy for me so my husband has been helping out with dinner lately. These peppers were his creation. He’s not real proud of the picture but the peppers were great! Quick and easy also! He just wrapped them up and threw them on the grill – perfect summer dinner.

6 medium bell peppers (or 4 large)

1 lb ground turkey

½ cup onion, diced

½ cup celery, diced

¼ cup radish, diced

1 tsp garlic, minced

½ tsp salt

½ tsp cilantro

½ cup shredded cheese, if desired


  • In a large skillet, sauté onion, celery, radish and garlic in a little olive oil. Brown turkey meat with vegetable mixture. Sprinkle on salt and cilantro and stir until well blended with meat mixture.
  • While stuffing mix is cooking. slice the tops off of the bell peppers and scrape out the seeds, leaving bell pepper intact.
  • Fill the bell peppers with stuffing mixture and sprinkle with cheese if desired. Wrap each pepper in foil and grill at 400°F for about 10 minutes.
  • Serve with rice or top with desired toppings – salsa, sour cream, etc.
