You can thank my son for these waffles. He wanted strawberries inside his waffles and I decided to puree them so the waffles didn’t have chunks of fruit. The strawberries give the waffles a wonderful flavor with just an extra hint of sweetness. Serve with maple syrup and powdered sugar. Makes 6 waffles
1 cup sweet sorghum flour
½ cup tapioca starch
2/3 cup almond flour
½ cup stevia or sugar
1 tsp baking powder
½ tsp vanilla
½ tsp sea salt
1 egg
1 cup strawberries, pureed
¾ cup almond milk
- In a large mixing bowl, combine strawberries, flours, tapioca starch, baking powder, vanilla and salt. Blend until smooth and add in egg.
- Slowly add in milk and blend over medium speed for about 45 seconds or until mixture is combined and smooth.
- Pour about 1/3 cup into each section of a hot waffle iron and cook according to iron instructions. Repeat with remaining batter.
