I’m so ready for spring that I couldn’t wait to make these cookies. I wanted to make something light and fresh with great spring flavors, like lemon and strawberry. These are like a crisp butter cookie with very simple ingredients – just 7 total ingredients!!! Makes about 2 dozen cookies
2 cups flour – I used gluten free, but any blend should work
1 cup butter or shortening *see note below*
3/4 cup sugar, or honey
1 egg
1 large lemon, zest and juice
4 strawberries, hulled
1 cup powdered sugar
- In a large mixing bowl, blend together sugar and butter until creamy. Add in egg, lemon juice and zest.
- While mixing, pour in flour slowly. Beat until blended.
- Using a cookie scoop, place cookie dough balls onto a baking sheet. Gently flatten with palm.
- Bake at 350F for about 15 minutes or until edges are slightly brown. Remove from oven and let cool completely on a wire rack.
- Meanwhile, puree strawberries using a small blender. Whisk together powdered sugar and strawberry puree in a bowl.
- Drizzle strawberry glaze over cooled cookies. Store cookies in a sealed container.
*For a butter replacement: use palm shortening or coconut oil. For a lower fat option, you can substitute 1/2 cup butter or butter replacement with 1/2 cup applesauce or yogurt.
