Strawberry Coconut Fudge

Valentine’s Day is just around the corner. While I do love this holiday, I hate the ridiculous amounts of unhealthy treats people consume (my prior self included). Typically, chocolate is the way to go… well and flowers. I can’t help you on the flowers part but I can help you with the treats! These little coconutty bites are so rich and full of healthy fats. Honestly, they are so simple to make and don’t require any added sugar. There is a slight hint of strawberry that goes great with the rich coconut. These have a similar texture to fudge. Makes about 20 1/2″ bites

6 large strawberries, hulled
2 oz cocoa butter, melted *see note below*
1/2 cup coconut butter (also called concentrate or manna)
1/4 cup coconut oil, melted
1 tsp vanilla
1/2 tsp almond extract
 
In a small blender or food processor, combine ingredients and blend until very smooth. Spread mixture into forms. I used these heart forms but you can use other types of molds. Alternatively, you can spread this in a small pan or container. Place fudge in refrigerator for about an hour to harden. Pop out of molds and serve or store in a sealed container in the fridge.

*The best way I have found to melt cocoa butter is to grate it, if it is really hard. Then melt in a double boiler or microwave as desired.*

To make these a little sweeter, just add a tsp of honey to the mixture while blending.

You can also dip these in melted chocolate for an even richer treat!
