Spinach Artichoke Chicken Skillet

If you like spinach artichoke dip, chances are you’ll love this recipe too! What I love about this recipe is how simple it is. You just need a few ingredients and you have a quick and easy dinner, lunch or even breakfast. Makes about 4 servings


2chicken breasts, cooked and shredded or chopped
3 Tbsp olive oil
3 cups spinach, chopped
1 cup canned or jarred artichokes, chopped
1 /2 cup roasted red peppers, finely chopped
1/4 cup onion, diced
1/2 tsp garlic, minced
1 tsp sea salt
1/2 tsp black pepper
Shredded cheese, if desired

In a large skillet, saute spinach, artichokes, red peppers, onions and garlic. Cook for about 10 minutes or until onions are cooked through Add in chicken breasts, salt and pepper. Cook for an additional 5 minutes. Sprinkle with cheese if desired. Serve over pasta or rice for a complete meal.
