Southwest Quesadillas

Quesadillas are so versatile and customizable. This combination features some easy favorites at our house. We added some avocados and black beans to make this an easy vegan quesadilla and then topped with some dairy free cheese and chili pepper sauce! Makes 4 servings

Southwest Quesadillas

8 6″ tortillas (corn or other)
2 avocados, diced
1/2 tsp garlic, minced
1/2 tsp lime juice
1 can black beans, rinsed
1/2 tsp sea salt
1/4 tsp chili powder
1/4 tsp black pepper
1/4 cup green onions, diced
fresh cilantro, finely chopped
shredded cheese
Sriracha or chili sauce
 

Heat a griddle to 350F or medium heat. In a bowl, mash avocados with garlic and lime juice. Stir in salt, chili powder, pepper, onions and black beans. Place tortilla shells on hot griddle. Cook for about 3 minutes or until slightly crisp and flip shells. Top 4 shells with filling mixture, cheese and sriracha. Top with remaining four shells. Cook for another 3-5 minutes. Sprinkle with cilantro and additional sriracha if desired.
