I know you all are carving or painting or at least seeing pumpkins – especially this week. Our house is no different. Our porch is full of painted pumpkins and gourds and we will be carving a couple later in the week. We have bought so many pumpkins over the years and I have NEVER cooked one- until today! That recipe will come later… here’s a hint: the recipe title ends in “pie”. 🙂 Anyway – I know obtaining pumpkin seeds is not a fun or easy process but these will make it worth it! These roasted seeds are easy to make and so flavorful. They have a nice bold flavor that is great for an adult Halloween treat. Makes about 1 cup of seeds
Seeds from one pie pumpkin (about 1 cup)
1/4 tsp liquid smoke
1 tsp garlic salt
1/4 tsp chipotle pepper
1/4 tsp paprika
Olive oil

In a foil covered pan, drizzle with olive oil. Put pumpkin seeds on pan and sprinkle with remaining ingredients. Stir seeds on pan with a fork until coated in oil and spices. Bake at 350F for about 25 minutes, stirring halfway through cooking. Let cool before serving
