Simple Tomato & Cucumber Salad

I love the simplicity of quick and easy salads feature fresh garden produce. We always have a lot of tomatoes and cucumbers early in the garden season so we are quickly looking for ways to eat them. This salad is so simple, yet so light and refreshing. It is quick enough to serve with a fast burger meal, yet appealing enough to serve with a more eloquent dinner. Makes about 4-6 servings

Simple Tomato Cucumber Salad

2-3 fresh tomatoes, thinly sliced
1 large cucumber, peeled and sliced
4 large fresh basil leaves, cut into thin ribbons
1 Tbsp olive oil
1 Tbsp balsamic vinegar
1 tsp sea salt
1/4 tsp black pepper
1/4 tsp thyme
1/4 tsp oregano
 

In a small bowl, combine oil, vinegar, salt, pepper, thyme and oregano. Whisk until blended. In a serving bowl, combine cucumber and tomato slices. Pour over dressing mixture. Sprinkle over basil pieces. Refrigerate about 30 minutes or until ready to serve.

 

Save time! Use a pre-made dressing. Italian, Basil or something similar would work. Try out Tessemae’s Green Goddess dressing. It works great in this recipe!
