Simple Spring Salad

I love the fresh flavors of Spring and Summer – especially when I can get most of the ingredients from our garden! This salad features a few fresh vegetables with one of our favorite salad dressings from Tessemae’s. They produce the greatest and cleanest dressings we use. They use natural sweeteners such as honey, dates, etc. If you are on a Whole30 program, most of their dressings are compliant! Check them out!

6 cups mixed greens (kale, radicchio, spinach)
1 avocado, thinly sliced
1 cup roasted mini or red peppers, chopped
1/2 cup artichoke, cooked and chopped
1 whole carrot, peeled and shredded
1/4 cup Tessemae’s Fat-Free Red Wine Vinaigrette

Place salad greens on serving plates and top with remaining ingredients. Alternatively, you can throw everything in a large salad bowl and serve. Makes a great lunch or dinner salad or side salad for company!
