Sometimes it is easy for me to get caught up in creating these extreme recipes – some that are unrealistic, use hard to find ingredients and time consuming. I love creating these types of recipes because I like a challenge. However, I am also a wife, a mother, an accountant, a Wednesday night church teacher (Catechist for my fellow Catholics), etc. Therefore, the practical side of me reminds the creative side that sometimes you just need a break. Plus – sometimes these easy recipes taste just as good as the fancy ones. I’m always looking for inspiration, so if there is something you want me to “healthify” or create a recipe – by all means, let me know!!
As I stated on my facebook page – fancy recipes are overrated as this Hash is simple, yet delicious. Perfect for breakfast, lunch or dinner! Makes 1 serving
1 large potato, diced and peeled
1 slice bacon, diced (I prefer uncured turkey bacon)
1/4 cup sauerkraut
Dash of salt, pepper and paprika
1 tsp olive oil
In a large skillet, combine ingredients and saute over medium heat for about 15 minutes or until cooked through. Stir occasionally to ensure browning on each side.
**SUPER SHORTCUT** – bake your potato in the microwave (of if you have a leftover) and just peel and dice it. This will cut your sautéing time by a few minutes. You can use sweet or white potatoes too.
