I’d been doing some searching for inspiration for apples. One of my co-workers so very graciously gave me a BOX of fresh apples. I was trying to find as many uses for them as possible. Sure we made juice, sauce, pie, crisp, etc… but I wanted a savory dish. I kept seeing these recipes for potato and apple combinations. I love a good casserole dish and decided this recipe would be created – good or not. Thankful for my family – it was good! Plus when you add bacon, can you really go wrong?? Makes about 6-8 servings.
5-6 potatoes, peeled and thinly sliced
3-4 apples, peeled and thinly sliced
3 slices of turkey bacon, diced (I like Applegate brand)
2 tsp sage
1 tsp sea salt
1/2 tsp black pepper
1 tsp parsley
1 Tbsp olive oil
1/4 cup mayonnaise
1/2 cup coconut milk (or sour cream)
1 cup shredded cheese

In a small bowl, combine sage, salt, pepper, parsley, oil, mayo and milk; stir until well blended.

In a large skillet, combine potato slices, apples and bacon. Saute for about 15 minutes or until bacon is cooked through (potatoes will still be a little raw).

Pour sauce over potato mixture and stir until combined. Sprinkle with 1/2 cup cheese.

Pour potato mixture into a greased 3 qt baking dish. Top with remaining cheese. Bake at 375F for about 20 minutes or until cheese starts to brown and potatoes are cooked through.
