Salted Caramel Peanut Butter Cookies

Peanut butter cookies are delicious by themselves. When you add a salted caramel taste, something magical happens! These cookies are really simple to make, yet so tasty! If you have a peanut allergy, you could substitute almond butter or even sunflower seed butter. Did I mention these are also Paleo friendly and gluten free??? Makes about 30 cookies
Salted Caramel PB Cookies

1/3 cup coconut oil, palm shortening, or butter
2/3 cup peanut butter
1/4 cup honey
1/2 cup coconut sugar
1/2 tsp baking soda
1/2 tsp baking powder
1 egg
1/2 tsp vanilla
1 1/3 cup all purpose flour(paleo or gluten free)
Sea salt

In a large mixing bowl, cream together butter, peanut butter, honey and sugar. Add in vanilla and egg until smooth. Add in flour, baking soda and baking powder. Using a cookie scoop or your hands, form cookie balls that are about 1 inch in size. Place on a baking sheet lined with parchment paper. Carefully press cookies down with a fork. Sprinkle over a little sea salt on each cookie. Bake at 375F for about 10 minutes or until slightly brown. Let cookies cool completely.
