Salted Caramel Cashew Clusters

It’s never too early to start thinking about Christmas – or testing Christmas goodie recipes!! Turtle candies are my favorite holiday candy. There is a local candy shop that makes hands down, the BEST turtles. Unfortunately, they are loaded with dairy, artificial flavors and sweeteners, etc. SO, it was a no-brainer… I HAD to recreate it but healthy (or healthier at least). This version is made with all-natural ingredients and it is also pretty simple to make. Makes about 15-18 clusters.

Chocolate Coating
1/4 cup coconut oil, melted
1/3 cup cocoa powder
1 Tbsp honey, maple syrup or other sweetener
Caramel Cashews
1/2 cup cashew pieces
10 dates, pitted
1 Tbsp coconut oil
sea salt

  • In a small sauce pan, melt coconut oil with honey. Stir in cocoa powder until smooth. Remove from heat.
  • In a small blender or Magic Bullet, blend dates and oil together until smooth and caramel consistency. It could take a couple of minutes.
  • Stir cashews into date mixture. Form into small balls – about 1 tsp each. Dip in chocolate sauce and place on a baking sheet lined with parchment paper.
  • Gently press each cashew cluster flat. Place clusters in the freezer for about 20 minutes. Remove from freezer and drizzle with remaining chocolate. Sprinkle with sea salt.
  • Refreeze for a few minutes. Store these in fridge or freezer.
