Salsa Meatloaf

As one of our favorite comfort foods, meatloaf is constantly getting a re-make for us to try new flavors. This version turned out great with a little heat from the salsa and moisture from the fresh vegetables. Ground turkey helps lighten the meal up a bit. This is great served with some fresh avocado and cilantro-lime rice! Makes about 4 servings

Salsa Meatloaf

1 lb ground turkey
1/3 cup bell pepper, finely chopped
1/3 cup onion, diced
1/2 cup tomatoes, diced
1/4 cup almond flour (or gluten-free bread crumbs)
2 Tbsp olive oil
1 tsp Adobo seasoning
1/2 tsp sea salt
1/2 tsp black pepper
1 cup salsa
1 avocado, sliced (optional)

  • Mix together turkey, pepper, onion, tomatoes, flour (or crumbs), oil, seasoning, salt and pepper.
  • Place mixture in a greased baking dish. Form into log shape. Top with salsa.
  • Bake at 375F for about 35-45 minutes or until completely cooked through.
  • Top with additional salsa and avocado if desired.
