Salsa Chicken

This is probably one of the easiest yet tastiest dishes I make for us at home. It takes just a few simple ingredients to make a flavorful, weeknight dish in a flash. You can serve this over rice, cauliflower rice, or just by itself! Makes about 4 servings

3-4 chicken breasts, cut into chunks
2 Tbsp olive oil
1 tsp adobo seasoning
Dash of salt & pepper
1 onion, chopped
2 garlic cloves, minced
1 can or jar of fire roasted diced tomatoes
1 cup salsa
1 jalapeno, minced
Fresh cilantro, optional
Cooked rice


In a large skillet, heat oil and add chicken, onions and garlic. Sprinkle with adobo seasoning and salt and pepper. Cook for about 10- 15 minutes, stirring occasionally until chicken is cooked through. Add in can of tomatoes, salsa and jalapeno. Cook for an additional 5 minutes to heat through. Serve over rice.  Top with fresh cilantro, if desired.
