Rocky Road Cookie Bars

These are a perfect example of how a gluten free diet can be unhealthy. A lot of people assume when you go on a gluten free diet, you are trying to eat healthy. Any diet can be unhealthy if you frequently consume foods like this. However, these bars are so worth the “cheat” day. I’ll be honest…. I couldn’t eat them BUT my kids and husband inhaled them so fast… They literally ate the whole pan in one evening. In that case, I KNOW they are good. But honestly, when you combine a chocolate chip cookie with marshmallows, nuts and more chocolate – can you go wrong?? These make great treats for gatherings, school parties or even holiday gifts. Don’t eat gluten free? Don’t worry – just substitute your favorite flours. Makes about 12 bars

Rocky Road Cookie Bars

3/4 cup brown sugar (or coconut sugar)
1/2 cup palm shortening (or butter)
1/2 tsp vanilla
1 egg
1 1/4 cup GF all purpose flour
1 tsp baking soda
1/2 tsp sea salt
1 1/2 cup chocolate chips, divided
1/2 cup chopped walnuts
1/2-1 cup mini marshmallows
In a mixing bowl, cream together sugar, shortening and vanilla until smooth. Add in egg. Add in flour, soda and salt and mix until dough forms. Fold in 1 cup chocolate chips. spread dough evenly in a greased 9×9 baking dish. Top with mini marshmallows, nuts and remaining chocolate chips. Bake at 400F for about 20 minutes or until edges start to brown and center is cooked. Let cool about 10 minutes before cutting into bars.
