Roasted Brussels with Garlic Mayo

This is my new favorite side dish. I’m typically not a fan of brussel sprouts. However, they taste great roasted in this simple recipe. The garlic mayo is great to dip them in – not necessary but still great! Makes about 4 servings

ROASTED BRUSSEL SPROUTS WITH GARLIC MAYO

3 cups brussel sprouts, halved
1 Tbsp olive oil
sea salt
black pepper
Optional spices: dill, thyme, oregano, basil, paprika, cumin, chili powder

In a large bowl, combine sprouts, oil and desired seasonings. Toss until coated and place on a baking sheet. Bake at 400F for about 15 minutes, turning once halfway through.

GARLIC MAYO
1/3 cup mayonnaise (I like soy free, vegan Spectrum Brand)
1 tsp minced garlic
1 Tbsp olive oil
1 Tbsp balsamic vinegar
juice of 1 lemon
1 tsp parsley

Mix together ingredients in a small bowl. Refrigerate until ready to serve.
