The combination of sweet potatoes, bacon, asparagus and kale make this simple wild rice dish amazing! This would be a great Thanksgiving Day side – or one for any time of year! Makes about 4-6 servings
Sweet Potato Kale Pilaf
A simple, yet flavorful side dish featuring sweet potatoes, kale, asparagus and bacon.
Bring rice, water and oil to a boil over low-medium heat. Cover and cook for about 30 minutes or until rice is cooked through and liquid is absorbed.
In a large skillet, cook bacon. Remove cooked bacon from skillet, set aside and reserve drippings.
In bacon drippings, saute sweet potatoes, asparagus, onion and garlic for about 10 minutes or until vegetables start to soften.
Add in salt, pepper, kale and rice. Cook for an additional 8-10 minutes. Top with fresh parsley and serve.
