Spicy Chorizo Stuffed Mushrooms
spicy chorizo, ground
washed, stems removed
shredded cheddar cheese
(1/4 cup reserved)
chopped green onions
fresh cilantro, finely chopped
ranch dressing or chipotle mayo for serving
In a large skillet, brown chorizo until cooked through. Once cooked, add in ¾ cup shredded cheese and onions, mixing until combined.
Place mushrooms in a single layer in a 9×13 baking pan. Spoon chorizo mixture into mushrooms. Top with reserved shredded cheese.
Bake at 400F for about 20 minutes or until mushrooms are soft. Remove from oven and top with chopped cilantro. Serve with ranch dressing or even chipotle mayo.
