Stuffed mushrooms are one of my husband’s favorite appetizers but I get bored with the same flavors. He also loves spicy food so I decided to make these Spicy Chorizo Mushrooms. They are so simple and full of delicious flavor. Great for holidays, game days, tailgates or even just dinner! Makes about 20 mushrooms, depending on size
Spicy Chorizo Stuffed Mushrooms
In a large skillet, brown chorizo until cooked through. Once cooked, add in ¾ cup shredded cheese and onions, mixing until combined.
Place mushrooms in a single layer in a 9x13 baking pan. Spoon chorizo mixture into mushrooms. Top with reserved shredded cheese.
Bake at 400F for about 20 minutes or until mushrooms are soft. Remove from oven and top with chopped cilantro. Serve with ranch dressing or even chipotle mayo.
