  1. In a large skillet, brown diced potatoes in oil or butter over medium heat for about 10-15 minutes or until slightly soft, turning occasionally.
  2. Add in peppers, onions and kale. Sprinkle garlic powder, salt and pepper over vegetables and cook for an additional 10 minutes.
  3. Add vegetable mixture to plates, top with sausage links, hard boiled eggs, sliced avocado and cilantro.
