Southwest Breakfast Bowls

Each and every Saturday morning, my kids request pancakes. Don’t get me wrong, I love a good pancake but I’d much rather have one of these tasty breakfast bowls. Not only are they better for you but they are so easy to make your own. We love adding fresh garden veggies in there when we have them. You don’t have to wait until the weekend to enjoy these simple bowls. Makes about 4 servings.

  1. In a large skillet, brown diced potatoes in oil or butter over medium heat for about 10-15 minutes or until slightly soft, turning occasionally.
  2. Add in peppers, onions and kale. Sprinkle garlic powder, salt and pepper over vegetables and cook for an additional 10 minutes.
  3. Add vegetable mixture to plates, top with sausage links, hard boiled eggs, sliced avocado and cilantro.
