Skillet Tacos

I always say how much I love Italian food – the rest of my family LOVES Mexican food. If I ask my kids what they want for dinner it’s tacos, nachos, or enchiladas. I love how simple and customizable tacos are – but crunchy tacos with three kids basically means I clean up just as much from the floor and counter as they eat. This Skillet Taco meal is all of their favorites in an easy to eat, less mess, form. I love it. They love it. Everyone wins! Makes 4-6 servings

Instructions
  1. In a large skillet, brown beef or turkey until completely cooked. Drain an excess fat from skillet.
  2. Add black beans, corn, tomatoes, salsa and cheese to beef in skillet. Stir together and cook for about 10 minutes on low heat.
  3. When heated through, remove from stove and top with crushed tortilla chips, avocado and toppings of choice.
