This is truly one of my favorite meals. It tastes like something from an Italian restaurant yet is incredibly simple to make at home. To be honest, my kids hate it. BUT – sometimes I don’t make things for them; sometimes I make things for ME! This is a perfect date night meal but is easy enough to make for a weeknight meal too!
I usually make this with some simply cooked chicken but this is also great with shrimp, Italian sausage or even without meat altogether – making this a vegetarian option too!
Of course, we use a gluten-free bowtie pasta. I really like Jovial brand (found here at Amazon or on Thrive Market). You can also make this dairy-free or vegan by using a dairy-free parmesan like Follow Your Heart brand or VioLife.

Ingredients
- 1 box bowtie pasta
- 1 8oz container of sliced mushrooms
- 2 cups fresh spinach
- 1 tsp minced garlic
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2-1 tsp crushed red pepper flakes
- 3/4 cup vegetable broth
- 1 1/2 cups shredded Parmesan cheese
- 1/2 cup diced fresh tomatoes

Instructions
- Sprinkle Italian seasoning over chicken breasts. In a large skillet, heat oil and cook chicken breasts for about 8-10 minutes on each side or until cooked through.
- In a large saucepan, cook bowtie pasta according to directions. Drain and return to saucepan.
- Once chicken is cooked, remove from skillet and slice. Add mushrooms, garlic, spinach, salt, pepper, red pepper flakes and broth to skillet. Cover and cook over medium heat for about 5-7 minutes or until mushrooms are soft. Toss pasta in skillet with mushrooms. Add in parmesan cheese, sliced chicken and tomatoes. Stir gently and serve.
