Lemon Garlic Chicken & Asparagus Pasta

I don’t know about you but this Winter has been ugly. We just started Spring Break and it is still cold and drizzly. I’m doing everything in my power to will Spring into our lives – bright colors, fresh foods and everything lemon!

This recipe features fresh and light ingredients for a simple, healthy meal. We love the combination of lemon and asparagus and it works perfect with this chicken and pasta. Not a fan of chicken? Skip it for a vegetarian meal or add some seafood!

You can really use whatever pasta you’d like. Personally, I love using Ancient Harvest Rotini or Penne, Explore Cuisine Organic pasta or Jovial pasta – all are great organic, gluten-free brands that hold up well to cooking in recipes like this one.

  1. In a large skillet, cook chicken breasts in oil for about 10-15 minutes, turning halfway through
  2. Add in onion, garlic, asparagus, tomatoes and pine nuts. Cover and cook for about 10 additional minutes or until asparagus is soft.
  3. Add in pasta, salt, pepper, basil and lemon juice and zest. Toss to combine and cook for 5 more minutes. Remove from heat and stir in Parmesan cheese if desired.
