When I say this is one of my family’s most loved recipes, I’m not exaggerating. Honestly – when I made these the first time, my son said “Mom….best breakfast creation EVER!”. Even Miss Picky Pants (who hates waffles but loves pancakes) inhaled these. And the baby? Well he loves all things so he didn’t complain. What I love most about these is that there is no added sugars or sweeteners in the batter. You can use this recipe to make such a variety of meals. Serve them topped with an egg or breakfast scramble; drizzle some maple syrup and top with fruit. It’s easy, fun and delicious! Makes about 16 waffles – go ahead and make the full batch so you can freeze some for later!
Grain-Free Bacon Waffles
A simple and easy recipe for grain-free, dairy-free waffles stuffed with bacon bits! Great for sweet or savory dishes!
In a large bowl, combine dry ingredients. Add in eggs, milk, oil, vanilla and vinegar. Mix until just combined. Fold in bacon crumbles.
Pour batter into hot waffle maker as directed by maker instructions. I use about ¼-1/3 cup batter for each waffle section. Let cook until golden brown. Remove from waffle maker and put onto a baking sheet. To keep waffles crisp while you finish the remaining batter, place the waffles on the baking sheet in the oven on 300F.
To freeze: let waffles cool completely and place in freezer bags. To reheat; place waffles in a toaster, in a skillet or in the oven to warm. You can microwave them but they won’t be as crisp.
