In a large bowl, add dry ingredients. Cut in butter or shortening until pea size crumbles are created. Add in water, sour cream, vinegar and honey. Gently mix until just combined. Place dough on a floured sheet of parchment paper. Roll out into a large, thin circle. Flip the parchment paper onto a pie pan. Form edges as desired. If crust breaks or cracks, brush with a little water and form together with your hands.
