Gluten-Free Grown-Up Mac & Cheese
A delicious grown-up version of a classic mac & cheese that features extra proteins and veggies for a complete meal that even the kids will love!
gluten-free penne pasta
onion, thinly sliced
shredded cheddar cheese
milk of choice
fresh parsley, optional
In a large saucepan, cook pasta according to directions and drain.
Meanwhile, cook bacon in a large skillet. Remove cooked bacon and reserve drippings in pan.
Saute the onions, garlic and mushrooms in bacon grease for about 10 minutes or until soft. Add in spinach, sausage slices and cook for another 5 minutes.
Return pasta, vegetable and sausage mixture to the large saucepan.
Add in cheddar cheese, cream cheese, milk, salt, pepper and paprika. Over medium heat, cook for about 10 minutes or until cheese has melted and the mixture is creamy.
Top with freshly chopped parsley if desired.
