Gluten-Free Grown-Up Mac & Cheese

For most families, macaroni and cheese is the ultimate comfort food. Our house really is no different – except we have to have gluten-free foods (and dairy-free for me too). I’m all for a rich, creamy mac & cheese but I need more than just sauce and pasta!

That’s how this recipe was created. I wanted a loaded dish that is a meal itself with extra protein and vegetables. This grown-up version is tasty enough that the kids love it too!

For the pasta, I used a gluten-free penne pasta. Jovial brand makes a good brown rice pasta. Explore Cuisine makes a good lentil pasta. Plus, there are so many other pasta options on Amazon, Vitacost or at Thrive Market. Your local stores should have some options too!

To make this dairy-free, simply a dairy-free alternative for the cheeses and milk. I like to use Daiya cheddar cheese sauce packets, Daiya refrigerated cheeses or VioLife cheeses (for extra shredded cheese and the cream cheese). For the milk, I use full-fat canned coconut milk.

Instructions
  1. In a large saucepan, cook pasta according to directions and drain.
  2. Meanwhile, cook bacon in a large skillet. Remove cooked bacon and reserve drippings in pan.
  3. Saute the onions, garlic and mushrooms in bacon grease for about 10 minutes or until soft. Add in spinach, sausage slices and cook for another 5 minutes.
  4. Return pasta, vegetable and sausage mixture to the large saucepan.
  5. Add in cheddar cheese, cream cheese, milk, salt, pepper and paprika. Over medium heat, cook for about 10 minutes or until cheese has melted and the mixture is creamy.
  6. Top with freshly chopped parsley if desired.
