There’s not much better than a wholesome, flavorful, hearty breakfast on a long weekend. This Strata features a variety of amazing ingredients: bread cubes, spinach, bacon, fresh veggies and herbs. It’s something we love to have on the weekends but it also makes a great brunch recipe for gatherings or holidays! Makes 6-8 servings

Ingredients
- 6 slices bread torn into pieces
- 8 eggs
- 1 cup milk of choice
- 1 cup shredded cheese DF if necessary
- 1 Tbsp olive oil
- 4 cups spinach
- 1/2 cup onion diced
- 1 clove garlic minced
- 1 large zucchini diced
- 1 cup mushrooms sliced
- 1/2 cup bell peppers diced
- 1 tsp oregano
- 1 tsp thyme
- 1 tsp sea salt
- 1/2 tsp black pepper
- 8 slices bacon cooked and crumbled

Instructions
- In a large skillet, heat oil. Add in onions, zucchini, mushrooms, peppers and garlic. Saute for about 10 minutes or until slightly soft. Add in spinach and cover. Cook for another 3-5 minutes or until spinach is wilted.
- In a large bowl, whisk eggs, oregano, thyme, salt, pepper and milk. Stir in cooked vegetables and cheese.
- In a greased 9x13 pan, place bread pieces. Pour egg and vegetable mixture over the top of the bread pieces. Bake at 375F for about 35 minutes or until cooked through.
- Top with bacon crumbles and additional cheese if desired.
Recipe Notes
You can also make this recipe ahead of time. Simply follow all instructions until you are ready to bake. You can refrigerate the unbaked dish overnight and bake as directed in the morning.
This meal can also be frozen. Simply bake it as directed, let cool and freeze in freezer safe containers.
