BLT Breakfast Waffle

I’m not a big fan of sweets for breakfast but I love a crisp waffle. My son and I opted to try to make a breakfast BLT waffle and it was a huge success – the perfect savory waffle! Now, I frequently make it for myself for breakfast.

BLT Breakfast Waffle
The perfect savory waffle with all of the flavors of a classic BLT! Great for breakfast, lunch or dinner!

Instructions
  1. Prepare waffle as directed. Simply toast in toaster or in a large skillet.
  2. In a skillet, cook bacon until done, reserving drippings in skillet. Remove bacon from skillet and set aside.
  3. In the bacon grease, saute kale for a few minutes until soft.
  4. Remove kale from skillet and crack egg into skillet. Fry up egg as desired.
  5. Top waffle with kale, egg, tomato, bacon slices and cheddar cheese. Drizzle with a bit of chipotle mayo if desired and freshly chopped parsley.
