I’m not a big fan of sweets for breakfast but I love a crisp waffle. My son and I opted to try to make a breakfast BLT waffle and it was a huge success – the perfect savory waffle! Now, I frequently make it for myself for breakfast.

Ingredients
- 1 plain frozen waffle
- 2 slices bacon
- 1 cup kale, chopped
- 2 slices tomato
- 1 large egg
- 1/4 cup shredded cheddar cheese
- chipotle mayonnaise, optional
- freshly chopped parsley

Instructions
- Prepare waffle as directed. Simply toast in toaster or in a large skillet.
- In a skillet, cook bacon until done, reserving drippings in skillet. Remove bacon from skillet and set aside.
- In the bacon grease, saute kale for a few minutes until soft.
- Remove kale from skillet and crack egg into skillet. Fry up egg as desired.
- Top waffle with kale, egg, tomato, bacon slices and cheddar cheese. Drizzle with a bit of chipotle mayo if desired and freshly chopped parsley.
