In a medium bowl, combine eggs, sugar, vanilla, lemon juice and apples and mix until combined. Add in flour, sugar, baking powder, salt, cinnamon and milk. Stir until just combined, taking care not to overmix.
In an airfryer, cut a piece of parchment paper to fit the bottom of the fryer basket. Spray with vegetable oil spray. Place about 1/3 cup of batter into a circle inside the fryer basket. Continue to place rounds of batter in basket, leaving about ½ inch space in between each until the basket is full. Spray tops of fritter batter with cooking spray to help edges crisp while cooking.
Cook fritters at 350F for about 8 minutes. Remove from fryer basket and set on a serving plate. Repeat with remaining batter.
Meanwhile, stir together powdered sugar, milk and vanilla in a small bowl to make the glaze. Add in more sugar or milk to get desired consistency. Drizzle glaze over warm fritters.
Store fritters in a sealed container for 3-4 days or freeze.
