Air-Fryer Apple Fritters

Apple Fritters were one of my favorite options at our local donut shop. I loved the crispy, fried edges and the soft, sweet centers with little chunks of apples. In our area, you will have a really hard time finding a gluten-free/dairy-free donut of any type, especially one that is Celiac safe.

I knew I was going to have to recreate these – but in a healthier version. Personally, I don’t tolerate fried foods, even if I do miss them on occaision. BUT, the air-fryer has really helped with those cravings! Sure, things aren’t EXACTLY the same as the fried version, but they taste great and don’t leave me feeling guilty – or extremely sick.

If you don’t have an air-fryer, you could try baking these in the oven on a baking sheet lined with parchment paper. However, if you are interested in an air-fryer, check out this one! We use ours all the time for cooking vegetables, meats and even treats like these fritters!

These Air-Fryer Apple Fritters use a simple gluten-free all-purpose flour blend. I really love Bob’s Red Mill GF 1:1 Flour and King Arthur’s GF blend. I’ve had the best success with their blends on recreating recipes. I also used dairy-free milk but you can use whatever milk works best for you.

These fritters will have a slightly different texture than traditionally oil-fried fritters. They still have that tasty crisp but have a more cake-like texture. Still delicious! This recipe makes about 8 fritters.

Instructions
  1. In a medium bowl, combine eggs, sugar, vanilla, lemon juice and apples and mix until combined. Add in flour, sugar, baking powder, salt, cinnamon and milk. Stir until just combined, taking care not to overmix.
  2. In an airfryer, cut a piece of parchment paper to fit the bottom of the fryer basket. Spray with vegetable oil spray. Place about 1/3 cup of batter into a circle inside the fryer basket. Continue to place rounds of batter in basket, leaving about ½ inch space in between each until the basket is full. Spray tops of fritter batter with cooking spray to help edges crisp while cooking.
  3. Cook fritters at 350F for about 8 minutes. Remove from fryer basket and set on a serving plate. Repeat with remaining batter.
  4. Meanwhile, stir together powdered sugar, milk and vanilla in a small bowl to make the glaze. Add in more sugar or milk to get desired consistency. Drizzle glaze over warm fritters.
  5. Store fritters in a sealed container for 3-4 days or freeze.
