Purple Lemonade

My kids actually called this “that purple drink” but I just didn’t feel like that was catchy enough. This drink is pretty sneaky but in a good way. I love being able to add nutrients from certain foods into my kids’ diet without a fight. My kids hate beets (passionately). However, I can put them in a juice or smoothie with some berries and they never know it. That’s what I did hear. I juiced some easy foods and made this light and refreshing drink. Makes about 8-10 cups

Purple Lemonade

1 large beet, peeled
1 apple
6 strawberries, hulled
1 orange, peeled
4 lemons, peeled
8 cups of water
1-3 Tbsp honey or other sweetener, optional
 
In a juicer, juice beet, apple, strawberries, orange and lemon. Pour into a pitcher with water. Add in honey, if desired. Stir until combined. Serve with ice.
