Pumpkin Graham Crackers

What is a better way to combine fall flavors of pumpkin and the gooey taste of just roasted marshmallows?? Make pumpkin graham crackers to build your smores!!! Or you can just eat the graham crackers, they are so good! I love the combination of the pumpkin and molasses in this – plus the fact that there are no grains, gluten, dairy, soy or eggs! Makes about 12 – 2″ square crackers

1 cup coconut flour
1/4 cup tapioca starch
1/2 tsp salt
1 1/2 tsp baking powder
1 Tbsp cinnamon
1 tsp vanilla
1/4 cup pumpkin puree
1/4 cup honey
1 Tbsp molasses
1/2 cup palm shortening, butter or ghee, softened

  • In a mixing bowl, combine dry ingredients. Add in wet ingredients and mix until smooth and dough forms into a ball.
  • If mixture is too wet, add a tsp of coconut flour at a time until dough forms. On a sheet of parchment paper, place dough ball. On top of dough, place a sheet of wax paper or parchment paper.
  • Gently roll out the dough into a 1/4″ thick rectangle. Using a pizza slicer or knife, gently cut dough as desired. Score dough with a fork in several places. Transfer bottom parchment paper to baking sheet.
  • Bake at350F for about 10 minutes or until crackers start to brown.
