Prosciutto Melon with Balsamic Glaze

This easy dish makes a wonderful side or a light dessert. The melon and prosciutto have the perfect sweet and salty blend. Plus adding the balsamic glaze just adds that final touch! This would be great to impress party guests or just throw on the grill with your dinner! Makes 8 servings

8 slices cantelope, about 1/2″ thick

8 thin slices of prosciutto


1 tsp almond, olive or coconut oil

1 tsp honey, agave or maple syrup

1 Tbsp balsamic vinegar

1/4 tsp thyme

1/4 tsp oregano


  • In a small saucepan, combine oil, sweetener, vinegar and spices and bring to boiling over medium heat. Let boil for about 8 minutes and remove from heat. The sauce will thicken as it stands and cools.
  • Meanwhile, wrap melon slices with prosciutto. Place on a hot grill and cook on each side about 3 minutes. Place hot melon slices on serving dish and drizzle with balsamic glaze.
