Power Up Beet Juice

Want to know my thoughts on juicing?? Well, if not – skip to the actual recipe! I don’t “juice” to lose weight or detox. Sure, juicing (responsibly) can be great for those things. I juice for health. Sometimes it can be hard to get all your nutrients in and juicing makes that easy. For example, if I’m having a “bad spell” in which I know that my body isn’t going to absorb my foods properly, I will make some juice in order to make it easier for my body to obtain those nutrients. Plus, there are certain vegetables or fruits that I don’t like (some greens and oranges in particular). Juicing is a great way to disguise some of those not-so-tasty foods into something better! This juice is very tasty. It has a lot of sweetness from the fruits but some bold flavors from the vegetables. In addition, I’ve added some greens and cranberries for even more nutrients. Makes about 1 quart of juice

power up beet juice

1 large beet, peeled
1 sweet apple (red delicious)
1 tart apple (granny smith)
2 cups mixed greens (spinach, bok choy, kale, etc)
2 celery stalks
1 orange, peeled
1 small cucumber
1 cup cranberries
 
In a juicer, combine ingredients. Make sure you wash your ingredients but you should only have to peel the beet and orange. Store in a sealed container in refrigerator for up to 2-3 days. Alternatively, you can freeze the juice and thaw later, but it’s not as tasty!
