Plantain Chips

I was honestly really skeptical about these. However, I got the base recipe from Elana’s Pantry so I knew it would be great. Elana has AWESOME recipes for many different diet types. I love her paleo recipes and the variety of flavors her recipes provide. Add your favorite spices to give these extra flavor. These are best served immediately after baking as they tend to get chewy when stored. Don’t worry, you probably won’t have any to store 🙂

2 large plantains, thinly sliced (green not brown!)
1/4 cup coconut oil, melted
1 tsp sea salt
1 tsp black pepper
In a bowl, combine plantain slices and coconut oil. Stir until slices are coated. Place plantain slices onto a greased baking sheet. Sprinkle with sea salt and black pepper or any other spices you prefer. Bake at 350F for about 15-20 minutes or until chips start to brown slightly.


Flavor options:

Dill – just sprinkle on some dill weed

Spicy – sprinkle on some chipotle powder and cumin

Misc -other options are ground ginger, garlic, etc.
