PB & J Nutmeal

During my extensive elimination and pureed food diet, I had to do some major creative inventing with my breakfasts. The “Nutmeal” was born. Similar to oatmeal, porridge, etc. Surprisingly it is VERY delicious and hearty. It is full of protein and fiber. Plus it is so easily customizable. This makes 1 serving.

1 cup soaked nuts (my favorite is a blend of cashew, almond and hazelnut) *see tip below*

1/4 cup almond or coconut milk

2 tsp peanut or almond butter

2 tsp jam (I like homemade grape or strawberry!)

 

In a small blender or Magic Bullet, blend nuts and almond milk until very smooth – adding more milk if necessary to get desired consistency. Pour mixture into a bowl and microwave or heat in a saucepan over stove. Stir in nut butter and jam and serve!

*The best way to soak your nuts for this dish is to place desired nuts in a bowl, cover with water and cover bowl with lid. Place in refrigerator overnight. The nuts will soften and swell up, making it easier to blend. You can use soaked nuts to make nut milk, cheese like mixtures, frostings, etc.*
