Pan Fried Apples with Coconut Cream

I’m currently on a soft food/pureed food diet.  I won’t lie – it’s not much fun at all. However, I’ve been trying to think of some recipes to fix my sweet tooth in the evenings and stumbled into this. This is the easiest dessert recipe I’ve ever made. Don’t get excited – it’s nothing fancy but it sure works in a pinch! Makes 1-2 servings

1 apple, peeled and thinly sliced
1 Tbsp coconut oil
1 tsp ground cinnamon
¼ tsp ground cloves or allspice
1 Tbsp coconut cream (from canned milk – see below)

  • In a skillet, melt coconut oil. Put apple slices in skillet and sprinkle with cinnamon and cloves.
  • Pan fry the apples until soft. Put in a bowl and serve with coconut cream. Like I said – easy!

Coconut cream:

I have found the easiest way to turn coconut milk into cream is using a small blender. Using a can of full fat coconut milk, carefully open the can and remove the solid milk parts. You can reserve the liquid milk for other uses. In a small blender, take the coconut milk solids, a tsp of honey or other sweetener and just a small splash of vanilla (1/4 tsp). Blend for a minute or so until the ingredients are well combined and the mixture starts to fluff up a bit. Use this as you would whipped topping.
